Mustard Flavored Chicken Cacciatore
|Broiler fryer chicken||3 Pound, cut up (1 Whole)|
|Dry mustard||1⁄4 Teaspoon|
|Salad oil||3 Tablespoon|
|Ketchup/Chili sauce||1⁄2 Cup (8 tbs)|
|Parsley flakes||1 Tablespoon|
1. In a 2-quart glass baking dish, arrange chicken pieces with meatier pieces toward the edge.
2. In a 2-cup measure, combine salt, dry mustard, oil, vinegar, pepper, ketchup, and parsley flakes; stir to blend. Pour sauce over chicken.
3. Cook, covered, 20 minutes, rotating dish one-quarter turn halfway through cooking time.
4. Rest, covered, 10 minutes before serving.
