|Sugar||1⁄4 Cup (4 tbs)|
|Vanilla flavored sugar||1 Teaspoon|
|Marsala||1⁄2 Cup (8 tbs)|
Using a rotary beater, beat the egg yolks with the sugar and vanilla sugar until very thick.
Blend in the Marsala and maraschino, beating constantly.
Turn mixture into top of a double boiler and cook over simmering water; continue beating until mixture is very light and begins to rise to top of double boiler.
Immediately remove from heat.
