Italian Zucchini Soup

Ingredients
  Olive oil 2 Tablespoon
  Parmesan cheese 1 , grated
  Basil 1⁄2 Teaspoon
  Zucchini 4 Cup (64 tbs), finely chopped
  Beef broth 4 Cup (64 tbs)
  Parsley 2 Tablespoon, minced
  Scallions 3 , chopped
  Garlic 1 Clove (5 gm), minced
  Butter 1 Tablespoon
  Salt 2 Teaspoon
  Pepper 1⁄8 Teaspoon
Directions

Mix together oil, zucchini, scallions, and garlic in a 2 1/2 to 3 quart casserole.
Cover, cook in Radarange oven 10 minutes; stir once.
Add seasonings and broth; cover, cook in oven 5 minutes.
Blend to a smooth texture.
