Broiled Shrimp Italian Style
|Tomato puree||1 Cup (16 tbs)|
|Dry mustard||1 Teaspoon|
|Peanut oil||1⁄2 Cup (8 tbs) (Planters)|
|Red wine||1⁄2 Cup (8 tbs)|
|Prosciutto||1⁄4 Cup (4 tbs)|
|Black pepper||1⁄4 Teaspoon|
|Chopped parsley||1 Tablespoon|
|Garlic||2 Clove (10 gm)|
|Fresh shrimp||2 Pound|
Heat oil in a skillet.
Peel & chop garlic and add to hot oil to saute.
Let garlic soften but not brown.
Cut ham into shreds and add to skillet.
Cook 1-2 mins.
Add wine, tomato puree, salt, mustard, oregano and pepper.
Blend thoroughly and heat through.
Place shrimp in shallow pan big enough for them to lie flat in pan.
Add a handful of chopped parsley to sauce and pour over the shrimp.
Marinate for several hours.
Broil the shrimp in this sauce, basting often.
Shrimp will cook in 7-9 mins.
