|Cornmeal||1 Cup (16 tbs) (yellow or white variety)|
1. Bring about two and one-half cups of water to a boil in the top part of a double boiler over direct heat. Add the salt.
2. Mix the cornmeal with the remaining water and add to the boiling water. Reduce the heat and cook, stirring constantly, until the mixture boils.
3. Place the pan over boiling water and cook, covered, about forty-five minutes, stirring occasionally.
