Joe's Special is a delicious side dish recipe which I always love to have on my dinner table. I bet, once you have this Joe's Special, you will always crave for some more.
  Ground beef chuck 2 Pound, crumbled
  Olive oil/Salad oil 2 Tablespoon
  Onions 2 Medium, finely chopped
  Garlic 2 Clove (10 gm), minced or mashed
  Mushrooms 1⁄2 Pound, sliced
  Salt 1 1⁄4 Teaspoon
  Nutmeg 1⁄4 Teaspoon
  Pepper 1⁄4 Teaspoon
  Oregano 1⁄4 Teaspoon
  Frozen chopped spinach/1/2 pound fresh spinach, washed, drained, and chopped, about 4 cups 10 Ounce, thawed and well drained (1 Package)
  Eggs 6

Brown ground beef well in oil in a large frying pan over high heat.
Add onions, garlic, and mushrooms (if used); reduce heat and continue cooking, stirring occasionally, until onion is soft.
Stir in seasonings and spinach; cook for about 5 minutes longer.
Add eggs; stir mixture over low heat just until eggs begin to set.
