Cream Puff Paste For Gnocchi
|Butter||1⁄4 Cup (4 tbs)|
|Water||1⁄2 Cup (8 tbs)|
|Flour||1⁄2 Cup (8 tbs)|
1. Bring the butter, water, salt and nutmeg to a rapid boil. Add the flour all at once and, stirring rapidly with a wooden spoon, lift the pan a few inches from the heat. Continue stirring thirty seconds, or until the paste comes away from the sides of the saucepan and forms a rough ball in the center. Remove from the heat.
2. Add the eggs, one at a time, beating vigorously after each addition until the paste is smooth.
