Minestrone

Ingredients
  Tomatoes 2
  Olive oil 1 Tablespoon
  Carrots 3
  Leeks 3
  Onion 1 Large
  Turnip 1
  Celery stick 1
  Potato 1 Large
  Vermicelli/Spaghetti 2 Ounce
  Chopped parsley 1 Tablespoon
  Chopped thyme 1 Tablespoon
  Chopped basil 1 Tablespoon
  Stock 2 Pint
  Parmesan cheese 2 Tablespoon
Directions

Dice vegetables, but not the potato.
Chop celery very finely.
Simmer all in 1 tab. of olive oil at the bottom of the stewpan with the herbs.
When golden brown, add the stock, the diced potato, and vermicelli and simmer for 20-30 minutes.
Dried beans are another useful ingredient, but must be soaked overnight if included.
