Mixed Pepper Peperonata
|Green pepper||1 Medium|
|Pepper red||1 Medium|
|Garlic||1 Clove (5 gm), minced|
|Chives||2 Teaspoon, minced|
|Tomato||1 Medium, chopped|
|Pepper||To Taste, freshly ground|
|Vegetable oil||2 Tablespoon|
Blister peppers if they have a tough skin.
Cut into strips and remove seeds.
Cover with garlic, chives and chopped tomato.
Sprinkle with salt and freshly ground pepper, and add the oil (1 tablespoon per serving allowed).
Good as salad or vegetable.
