Blackened Italian Salmon For 2 People

Ingredients
  Pepperonada peppers 1
  Olive oil 1 Teaspoon
  Red bell pepper 1 , cut julienned
  Green bell pepper 1 , cut julienned
  Onion 1⁄2 , cut julienned
  Basil 3⁄4 Ounce (Dry Or Fresh)
  Salt 1 Pinch
  Black pepper 1 Pinch
  White wine 1 Tablespoon
Directions

Saute peppers and onion in olive oil.
Add basil, salt and pepper.
Cook 3/4 done.
Add splash of wine.
Finish cooking until peppers are soft but not mushy.
Roll salmon filet or steak in Cajun Spice and place on hot black cast-iron skillet.
Cook done.
Put on plate and top with pepperonada peppers.
Garnish with chive sticks.
