|Crushed vanilla wafers||3 Cup (48 tbs)|
|Skim milk||3 Cup (48 tbs), divided (Cold)|
|Light cream cheese||8 Ounce (1 Package)|
|Sugar free hot chocolate mix||2 Tablespoon|
|Sugar free vanilla pudding mix||1 17⁄50 Ounce (1 Package)|
|Cool whip||4 Cup (64 tbs), thawed|
|Pure vanilla extract||2 Teaspoon|
|Semi sweet baking chocolate square||1|
Line bottom of 9 x 13 inch baking pan with crushed vanilla wafers.
Pour 1 cup milk into blender.
Add cream cheese and blend until smooth.
Add remaining 2 cups milk and blend on low for 2 minutes, until smooth.
In large bowl, gently stir together pudding mixture, Cool Whip topping, dry hot chocolate mix and vanilla extract.
Pour over crushed vanilla wafers.
Chill at least 4 hours.
Sprinkle with grated chocolate and garnish with fresh strawberries and mint leaves if available.
