Italian Chicken Casserole

|Garlic||1 Clove (5 gm)|
|Chicken stock||2 Cup (32 tbs) (1 Gill)|
|White sugar||1 Teaspoon|
|Tomato puree||3 Tablespoon|
|Medium sherry||12 Ounce (1 Glass)|
Melt the butter, flour the joints and brown them in the butter.
Put them aside.
Now add the roughly chopped shallots, mushrooms and crushed garlic.
Simmer gently for about 5 minutes.
Now add the tomato puree, sherry, chicken stock and sugar.
Finally, put in the chicken joints and simmer until tender.
This will take about 30-40 minutes.
Put the joints on a hot serving dish and pour the sauce over them.
Sprinkle with chopped parsley, or garnish with lemon wedges or watercress.
This can be served with a border of hot creamed potato or rice, or the vegetables can be served separately.
