Vegan Eggplant Parmesan Melanzane Alla Parmigiana

Vegan Eggplant Parmesan is one of my favorite Italian dishes, so of course I had to make it! Thank you for your suggestion! The video is 30 minutes long. I try to keep my videos as short as possible, but since there are several steps to make this dish it is longer than usual. I am making my own sauce and breading my own eggplant, so this video is like watching two in one. You can use store bought sauce if you would like, but making fresh tomato sauce is easy, let me show you how!

Ingredients

For tomato sauce:
Extra virgin olive oil 1/4 Cup (4 tbs)
Diced red onion 3/4 Cup (12 tbs)
Garlic 4 Clove (20 gm) , minced
Plum tomatoes 3 Pound
Mediterranean sea salt 1 Teaspoon (more to taste)
Bay leaf 1
Red pepper flakes 1/2 Teaspoon
Ground black pepper 2 Teaspoon
Dried oregano 1 Tablespoon
Dried basil 1 Tablespoon
Vegetable stock 1 Cup (16 tbs)
Grains of paradise 1 Teaspoon (fresh ground)
Fresh basil 5 Ounce , chiffonade (2 bunches)
For eggplant parmesan:
Eggplants 2 , cut in 1/2 inch slices
Flour 1/2 Cup (8 tbs)
Panko breadcrumbs 2 Cup (32 tbs)
Breadcrumbs 2 Cup (32 tbs)
Vegan parmesan 2 Tablespoon (Plus more for garnish)
Nutritional yeast flakes 1 Tablespoon (Plus more for garnish)
Dried oregano 2 Teaspoon
Dried basil 2 Teaspoon
Mediterranean sea salt 1/2 Teaspoon
Garlic powder 1/2 Teaspoon
Fresh ground black pepper 1 Teaspoon
Grains of paradise 1/2 Teaspoon
Red pepper flakes 1/2 Teaspoon
Vegan milk 1 Cup (16 tbs) (plain unsweetened)
Cornstarch 2 Teaspoon
Egg replacer 2 Tablespoon (Energ)
Daiya cheese 16 Ounce , shredded (2 packages, smoked gouda block, provolone cheese slices)
Pasta 1 Pound , cooked per directions on box (1 package)
