This Potato Cheddar Frittata recipe is great for a weekend breakfast or brunch. It's like one big baked omelet, and it's great to serve a big crowd all at once. Enjoy!

Ingredients

Red potato 1/2 Pound , thinly sliced ((2 small))
Salt 1 Pinch
Paprika To Taste (Optional)
Olive oil 2 Tablespoon
For egg mixture
Scallion 2 , sliced
Shredded sharp cheddar 4 Ounce
Eggs 8
Salt 1/4 Teaspoon
Cream 2 Tablespoon
Black pepper To Taste

Directions

GETTING READY

1. Preheat oven to 375 degrees F.

 

MAKING

2. Place a 12-inch non-stick ovenproof skillet over medium flame, heat olive oil and lay the potato slices on top.

3. Sprinkle potato slices with salt and paprika. Cover with lid and cook for about 5 minutes or until the potatoes get tender.

4. In a large bowl, combine scallions, cheddar, eggs, salt, pepper, and cream. Whisk well or until frothy on top.

5. When the potatoes are cooked, pour egg mixture on top and bake for 15-20minutes or until no visible liquidy egg is seen on top.

 

SERVING

6. Cut into slices and enjoy garnished with arugula and tomatoes.
