In this video recipe Barry shows you how to make an incredibly simple strawberry tiramisu! With Wimbledon in full flow too there is no better time to enjoy strawberries, and this is one cool way to make the most of them!
This recipe is speedy and a real crowd pleaser, the madeira cake chunks are soaked in strawberry juice and served together with a meringue and marscapone filling. You could add cream in with the marscapone if you wish, but Barry opts against it on this occassion as the flavours are good enough as they are with the sweetness of the meringue - hope you try it!
250 Gram (plus a few extra to garnish)
2 , mashed
1⁄2 , cut into small cubes
Fresh mint sprigs
Simmer together strawberries, brown sugar and water in a saucepan until strawberries soften for 4-5 minutes. Strain the strawberries and keep the liquid separately.
In a separate bowl, mix together mascarpone and mashed meringue nests.
Mix the coffee granules with the liquid reserved and dip Madeira cake pieces.
Layer them in a dessert bowl, followed by strawberries, cheese mixture, coffee liquid and garnish with mint sprigs and strawberries.
