Cheese Spinach Gnocchi
|Milk||1 1⁄2 Cup (24 tbs)|
|Ground nutmeg||To Taste|
|Uncooked farina||1⁄4 Cup (4 tbs)|
|Well drained cooked chopped spinach||1⁄2 Cup (8 tbs)|
|Egg||1 , well beaten|
|Chopped onion||1 Tablespoon, lightly browned in 1 teaspoon butter or margarine|
|Shredded swiss cheese||1 1⁄2 Cup (24 tbs)|
|Eggs||2 , well beaten|
|Milk||3⁄4 Cup (12 tbs)|
Bring milk, butter, salt, and nutmeg to boiling in a saucepan.
Add farina gradually, stirring constantly over low heat until mixture thickens.
Stir in spinach, egg, onion, and 1 cup shredded cheese; mix well.
Remove from heat and set aside to cool slightly.
Drop mixture by tablespoonfuls close together in a well-greased 9-inch shallow baking pan or casserole.
Sprinkle mounds with remaining cheese.
Combine remaining ingredients and pour over spinach mounds.
Bake at 350Â°F 35 to 40 minutes, or until topping is golden brown.
