Parsnip is an excellent source of potassium and folic acid, vitamin C, magnesium, pantothenic acid, copper, phosphorus, and vitamin B6; it is said to aid menstruation and to be purifying, antirheumatic, and diuretic.

Did you know that Roasted Parsnip is regarded as an important dish to complete a Christmas dinner? Parsnip is closely related to carrots, and is a better source of vitamins and minerals, than carrots. Parsnip can be consumed raw as well as cooked.
