Borage is an annual, medicinal plant with blue flowers. It is mainly used as a condiment but can also be consumed as a vegetable. Borage can be eaten raw or cooked or can simply be added to salads. It is advisable to marinate older leaves for 30 minutes in vinaigrette. Borage almost tastes like cucumber. It can also be used to flavor yogurt, cheese, cream or vinaigrette.
