Prize Strawberry Preserves
|Ripe strawberries||3 Cup (48 tbs) (Fresh Firm)|
|Sugar||3 Cup (48 tbs)|
Rinse, hull, and drain berries thoroughly on absorbent paper.
Halve the very large berries.
Put into a heavy saucepan.
Add 1 cup sugar; stirring gently, bring to boiling.
Boil 5 minutes, stirring constantly.
Repeat step 2 twice more, using remaining 2 cups sugar and boiling 5 minutes after each addition.
Turn into shallow glass dish, cover, and let stand 24 hours.
Stir occasionally while cooling.
Ladle into hot sterilized jars and seal
