Liquid Starter Or Potato Yeast

Ingredients
  Potatoes 3 , pared and cut up
  Compressed yeast cake 1
  Lukewarm water 1 Cup (16 tbs)
  All-purpose flour 1 Cup (16 tbs)
  Sugar 1⁄3 Cup (5.33 tbs)
  Salt 1 1⁄2 Tablespoon
Directions

MAKING
1.In a boiler, pour 4 cups of water and cook potatoes in it
2.Take a strainer and put the potatoes through a coarse sieve into a bowl, cool to lukewarm
3.In a bowl, pour water and soften the yeast in it
4.Also beat in the remaining ingredients
5.Cover the bowl, and set aside at room temperature for 24 hours
6.Pour the mixture into a sterilized jar, cover and store in cool, dark place
7.Use 1 cup starter to replace yeast cake and 1 cup liquid in recipes.

SERVING
8.Serve with a sauce of your choice

TIPS
Fresh starter should be prepared at least every 2 weeks, using 1 cup of the old or a fresh cake of yeast.
