|Peeled pears||3 Pound|
|Lemon juice||2 Tablespoon|
|Lemon gelatin||3 Ounce|
|Sugar||5 1⁄2 Cup (88 tbs)|
|Pectin powder||1 Tablespoon|
Peel, core and dice pears.
Mix pears and lemon juice in large kettle.
Add gelatin; bring to a rolling boil, stirring occasionally.
Add sugar; return to a full rolling boil.
Boil for 1 minute, stirring constantly.
Remove from heat; add pectin.
Stir and skim.
Ladle into sterilized jars to within 1 /2 inch of jar top; seal with paraffin.
