Plain Yeast Rolls
|Milk||1 1⁄2 Cup (24 tbs)|
|Butter/Margarine||1⁄4 Cup (4 tbs)|
|Active dry yeast/2 cakes compressed yeast||2|
|Water||1⁄2 Cup (8 tbs)|
|All purpose flour||5 Cup (80 tbs)|
Heat milk as described under Mixing, Kneading, and Raising add butter cut into pieces, sugar, and salt.
Stir until lukewarm.
Sprinkle or crumble yeast into water.
Use very warm water (105°F to 115°F.) for dry yeast; use lukewarm (80°F to 90°F.) for compressed.
Let stand for a few minutes, then stir until dissolved.
Add to butter mixture.
Beat in 4 cups of the flour adding more flour until the dough is soft but not sticky; proceed (kneading, rising, etc.).
Form into any type of roll, let rise, and bake in preheated hot oven (425 °F.) as described.
Makes about 2 1/2 pounds of dough.
