Bread Yeast Starter

Ingredients
  Unsifted flour 2 1⁄2 Cup (40 tbs)
  Sugar 1 Tablespoon
  Salt 1 Tablespoon
  Dry yeast 1
Directions

Combine 1 3/4 cups flour, 1 tablespoon sugar, salt and undissolved yeast in a bowl.
Add 2 1/2 cups warm water gradually and beat for 2 minutes with electric mixer at medium speed, scraping bowl occasionally.
Cover and let stand at room temperature for 4 days, stirring down daily.
To reuse Starter, add remaining flour, 1 1/2 teaspoons sugar and 1 1/2 cups lukewarm water and beat for 1 minute with electric mixer at medium speed.
Cover and let stand until ready to make bread again, stirring down daily.
