Cannellini in Caper Vinaigrette

Ingredients
  Italian cannellini beans 20 Ounce (1 Can, White Beans)
  Roasted red peppers 2 , diced (Buy Oil-Packed Peppers In A Jar)
  Sweet onion 1⁄2 , chopped (Such As Vidalia)
For the caper vinaigrette
  Olive oil 1⁄3 Cup (5.33 tbs)
  Red wine vinegar 3 Tablespoon
  Drained capers 1 Tablespoon
  Dry hot mustard 1⁄4 Teaspoon
  Salt To Taste
  Pepper To Taste
Directions

Drain and rinse the beans.
Combine them with the peppers and onion in a serving dish.
Combine the dressing ingredients in a jar.
Shake well and pour over the salad.
Toss, cover, and marinate for at least an hour, stirring occasionally.
