Watermelon Preserves

Ingredients
  Watermelon rind 1 , peeled, cut into desired pieces
  Sugar 2 1⁄2 Cup (40 tbs) (to each lb. rind)
  Lemons 2 (to each 5 lbs. rind)
  Salt To Taste
Directions

Peel and remove all ripe red part from rind.
Cut into small squares or desired shapes.
Soak 12 hours in salted water, using 1 tablespoon salt to each quart of water.
Drain.
Cover with fresh water and boil for about 20 minutes, adding a pinch of alum.
