|Watermelon rind||1 , peeled, cut into desired pieces|
|Sugar||2 1⁄2 Cup (40 tbs) (to each lb. rind)|
|Lemons||2 (to each 5 lbs. rind)|
Peel and remove all ripe red part from rind.
Cut into small squares or desired shapes.
Soak 12 hours in salted water, using 1 tablespoon salt to each quart of water.
Cover with fresh water and boil for about 20 minutes, adding a pinch of alum.
