Strawberry Preserves

Ingredients
  Stemmed strawberries 2 Quart (Firm Ripe Ones)
  Seeded ground lemon 1⁄4 Cup (4 tbs)
  Pectin powder 3 Ounce (1 Package)
  Water 1⁄4 Cup (4 tbs)
  Sugar 6 1⁄2 Cup (104 tbs)
Directions

Berries with hollow cores should not be used.
Combine berries, lemon, pectin and water in a large sauce pot.
Bring to a rolling boil, stirring gently.
Add sugar.
Return to a rolling boil.
Boil hard 1 minute, stirring frequently.
Remove from heat, stir gently 3 minutes to distribute fruit.
Pour hot into hot jars, leaving 1/4 inch head space.
Adjust caps.
Process 15 minutes in boiling water bath.
