Watermelon Rind Preserves

Ingredients
  Watermelon rind 1 Pound
  Cinnamon sticks 2
  Sugar 1 1⁄2 Cup (24 tbs)
  Toasted blanched almonds 1⁄2 Cup (8 tbs)
  Honey 1⁄2 Cup (8 tbs)
  Lemon 1⁄2 , juiced
  Water 1⁄2 Cup (8 tbs)
Directions

Peel watermelon rind and cube.
Put rind in a saucepan with sugar, honey, water, and cinnamon sticks.
Bring to a boil and simmer for 1 hour.
Stir at intervals and skim off any scum that rises to top while cooking.
Add almonds and lemon juice at end of cooking.
