Tofu Sabji

 

Tofu sabji may be described as the Indian adaptation of the popular tofu stir-fry. With the use of onions, tomato, capsicum, garlic, ginger, green chillies and rendering some inherent Indianess to the dish by use of special spices like cumin seeds, the garam masala powder, coriander, turmeric, and red chilli powders, it is possible to prepare a delicious and rich tofu sabji. As desired the tofu sabji maybe prepared semi-dry or with a gravy as a curry. Either way it is a great accompaniment to steamed rice, pulao, roti, nan, paratha and other Indian breads. 
 
Tofu is a soft cheese like product made by curdling soy milk just as paneer (cottage cheese) is prepared from milk. It is high in quality protein, Calcium, and B-vitamins, easily absorbs the flavours of different ingredients and is a highly versatile ingredient being the preferred choice of Vegans. It is easily digested, has cholesterol lowering properties and is rich in isoflavones - genistein and daidzein that reduce osteoporosis risk, menopausal symptoms, and incidence of prostate and breast cancers.
