Paneer Makhani

Paneer makhani is a dish that has redefined the Indian cuisine. It is primarily from the North Western part of the country and is an inherent part of the well-known Punjabi cuisine. It is made by cooking paneer, which is a form of cottage cheese, in rich gravy consisting of loads of butter and various spices and condiments. Different paneer makhani recipes do not vary by too much and the main difference is usually whether the gravy is red or white. Red gravy denotes that tomatoes have been used, while cashew nuts are used in white gravy. Sometimes locally available ingredients may be added to bring out the flavor of cottage cheese. A number of restaurants and chefs have become a success due to their ability to make excellent paneer makhani. It can be safely commented that good paneer makhani recipes are the difference between the success and failure of a North Indian restaurant.
