Lemon Rice

Lemon rice is yellowish colored rice, which is a South Indian cuisine made of basmati rice, peanuts, lemon juice and with many spices. It is a kind of pulao, which is prepared when people are in hurry as while preparing their children’s lunch boxes. This rice is famous in South India and is prepared in many peoples residence as the process consumes less time. Lemon rice is generally served with curd and salads and with poppadums. The traditional lemon rice recipe is blank in taste and it contains less of spices so it is best for children.   

 

Ingredients and Method of Preparing Lemon Rice Recipe

The prime ingredients required for preparing lemon rice are lemon juice, basmati rice, skinless urad dal, split gram dal, salt, turmeric powder, whole red chilies, grated ginger, mustard seeds, green chilies, finely chopped onions, curry leaves, coriander leaves, fried onion rings, roasted cashew nuts, water, refined oil and a pinch of Asafoetida. The first step is to wash the basmati rice thoroughly and is cooked in pressure cooker until one whistle and the rice is kept aside. In a kadai, the refined oil is heated and mustard seeds, urad dal, red chilies, chopped onions, green chilies, split gram dal and curry leaves are added in the oil so that it is fried for about 3 minutes.

 

Then the lemon juice, turmeric powder, asafetida, green chilies, grated ginger and salt are mixed and are added in the kadai. All the ingredients are to boil for a minute then the flame is switched off so that the lemon rice does not turn bitter in taste. The cooked basmati rice is put over, is mixed thoroughly, and is spread evenly. Then the salt in the lemon rice is tasted and is garnished with fried onions, roasted cashew nuts and coriander leaves. Then the lemon rice recipe can be served with coconut chutney, chicken fry and potato masala.   

  

Variations of Lemon Rice

Lemon rice can be prepared by using the left over rice rather than the basmati rice. In this delicacy, many roasted dry fruits can be added according to people’s choice such as cashews, peanuts, almonds. Lemon juice is one of the main ingredients but it has an alternative that is limejuice, which can also be used in the rice.

 

Serving Lemon Rice

The lemon rice recipe is traditionally served at lunch and can be served hot as well as in room temperature. It can be served itself or can be served with coconut chutney, potato masala and chicken fry. The lemon rice can be served by garnishing it with roasted cashews and peanuts and is topped with fried onion rings. This dish is generally served with raita, salads and with poppadums and is served in a plate according to people’s consumption. It can be accompanied with boil and gravy vegetables to increase the nutritive value of the dish.
