The exotic locale and the elegance of the city is the major influential factor on Jaipur food. The city was founded by Maharaja Sawai Singh who remolded it and made this grand city as his capital. Jaipur is famous for its traditional recipes which include local Rajasthani ingredients. Rajasthan food does not include large varieties of vegetables, but components like gram flour, clarified butter (ghee), chilies and nuts are highly favored in Jaipur food.

 

Being a royal cuisine, most of the dishes are full of butter and ghee that makes the food heavy. One of the most heavily made dishes is ‘dal batti’. Though it is full of fat, it is  immensely liked by locals as well as tourists. A mixture of dried vegetable known as ‘Rajasthani subji’ or ‘sengre ki subzi’ is a specialty in the food of Jaipur. The extensive use of chili and spices also make the food of the city quiet likable. Mirchi vada a typical Jaipur food is made with stuffed green chilies dipped in flour batter and deep-fried. Among the non-vegetarian food items, laal maas (red mutton curry) and safed maas (white mutton curry) are well-liked. Chicken is usually a secondary meat in Rajasthani cuisine.

 

Sweets are an importantpart of the grand cuisine of Jaipur. Ghevar, mawa burfi and beasn ke ladoo are some of the sweet delicacies that are served on in festivals and special occasions.
