Green Tomato Cucumber Pickles
|Cucumbers||5 , thinly sliced (About 5 Inch Each)|
|Green tomatoes||1 1⁄2 Pound, thinly sliced|
|Green peppers||4 Medium, chopped|
|Sweet red pepper||1 Medium, chopped|
|Cider vinegar||3 Cup (48 tbs)|
|Sugar||3 Cup (48 tbs)|
|Celery seed||1 Tablespoon|
|Mustard seed||1 Tablespoon|
Prepare the vegetables and set aside.
Combine vinegar with remaining ingredients in a heavy saucepot.
Cook over medium heat, stirring occasionally, until sugar is dissolved and mixture comes to boiling.
Add vegetables, reduce heat, and simmer about 10 minutes.
Continue simmering while ladling the pickles into hot sterilized jars' to within 1/8 inch of top.
Fill and complete one jar at a time.
(Be sure the vinegar solution covers the vegetables.)
