Snake Gourd Stuffed With Aloo
|Snake gourd||1 , peeled, centre seeds removed and cut into 2 inch pieces|
|Mashed potatoes||100 Gram, skinned|
|Cumin seeds||1⁄2 Teaspoon|
|Chopped green chilies||2|
|Chopped curry leaves||4|
|Chopped garlic||6 Clove (30 gm)|
|Garam masala powder||1⁄2 Teaspoon|
|Dry bread crumbs||1 Tablespoon|
|Melted butter||1 Tablespoon|
|Spring onion florets||1⁄4 Cup (4 tbs)|
|Tomato slices||1⁄4 Cup (4 tbs)|
Microwave covered 1 tbsp oil, cummin seeds, chillies and curry leaves for 1 minute.
Mix in onion and garlic and microwave until the onion is translucent about 3 minutes.
Mix in the potatoes, tomato, garam masala powder and salt and microwave further for 3 minutes, stirring in between, until the mixture is dry.
Stuff the snakegourd pieces with this mixture.
Press the cut sides in buttered breadcrumbs.
Roll the snakegourd in the remaining oil and microwave covered for 10 minutes, shaking the dish in between so that it gets lightly browned on all sides.
