Brown Is Beautiful
|Semolina||2 Cup (32 tbs)|
|Rye flour||2 Cup (32 tbs)|
|Sour yogurt||1 Cup (16 tbs)|
|Ginger||1 Tablespoon, chopped fine|
|Green chilies||2 , deseeded and chopped fine|
|Black pepper||1 Teaspoon, crushed|
Beat the yogurt and mix in the semolina and rye flour.
Add salt and adequate water to make a batter as in any other idli (i.e thick dropping consistency).
Leave to ferment overnight.
Add the ginger, pepper and chillies just before preparing and mix lightly.
Grease the idli moulds and fill them with the batter.
These idlis will not rise as much, as the conventional idlis.
Steam for 15-20 minutes.
After taking them out, oil the cooker leave for a couple of minutes, before scooping them out with a spoon.
Serve hot with a green chutney
