Gajar Mewa Nu Achar
|Vinegar||1 1⁄2 Cup (24 tbs)|
|Dry dates||10 (Kharak)|
|Grated carrots||1 Kilogram|
|Pounded garlic||15 Clove (75 gm)|
|Chili powder||1 Tablespoon|
Take out kharak from vinegar after soaking for about 1/2 hour and discard the seeds and slice thinly.
Microwave vinegar with jaggary for 2 minutes so that jaggery melts.
Cool and strain through a muslin cloth.
Mix in carrots and microwave for 15 minutes stirring in between.
Stir in the rest of the ingredients and microwave for 20 minutes at medium 50% power.
Bottle in air tight sterilized jars.
The pickle is ready to be served.
