Charleston Shrimp Pilau

Ingredients
  Diced bacon 1 Cup (16 tbs)
  Chopped onion 2 Tablespoon
  Cooked tomatoes 2 1⁄2 Cup (40 tbs)
  Uncooked rice 1 Cup (16 tbs)
  Shrimp 1 Pound, cooked
Directions

Fry bacon until crisp, remove and cook onion in bacon fat until a light yellow.
Add tomatoes and rice, mix well, cover and heat to boiling point.
Lower heat and simmer 20 minutes, occasionally stirring lightly with fork.
Set in warm place where there is no danger of scorching for another 20 minutes, to allow rice to become fluffy.
Add shrimp and bacon, place in casserole and bake in a 350° F.oven 15 minutes.
