Rich Chicken Curry

  Butter/Margarine 2 Tablespoon
  Onion 1 Medium, chopped
  Curry powder 2 Teaspoon
  Sugar 2 Teaspoon
  Ground ginger 1⁄2 Teaspoon
  Chicken bouillon cubes/Beef bouillon cubes 2 , dissolved in 1/2 cup hot water
  Red skinned apple 1 Small, chopped
  Condensed cream of chicken soup/Condensed cream of mushroom soup 1 Can (10 oz)
  Lemon juice 1 Teaspoon
  Cooked chicken/Turkey / lamb / beef / 2 cans deveined medium size shrimp, rinsed and drained 3 Cup (48 tbs), cut into bite size pieces
  Hot cooked rice 1 Cup (16 tbs)

Place butter in a 2 quart casserole.
Microwave, uncovered, on HIGH (100%) for 1 minute.
Stir in onion.
Microwave, uncovered, on HIGH (100%) for 3 mintues.
Stir in curry powder, sugar, and ginger.
Microwave, uncovered, on HIGH (100%) for 1 minute.
Add bouillon to onion mixture along with apple, soup, and lemon juice; blend well.
Cover with a lid or wax paper.
Microwave on HIGH (100%) for 3 minutes.
Stir in chicken.
Microwave, covered, on HIGH (100%) for 2 to 3 minutes or until heated through.
Spoon individual servings over rice.
At the table, pass your choice of condiments in individual bowls.
Makes 4 servings.
Cooked and crumbled bacon, chopped hard cooked egg, sliced banana, salted peanuts, shredded coconut, diced tomato, diced avocado, raisins, and chutney.
