Gajar-Meva Nu Achaar
|Carrots||2 Cup (32 tbs), grated|
|Sugar||2 Cup (32 tbs)|
|Garlic||2 Clove (10 gm), chopped|
|Garam masala||1 Teaspoon|
|Cardamom powder||1 Pinch (Elaichi Powder)|
|Nutmeg powder||1 Pinch (Jaiphal Powder)|
|Chili powder||2 Teaspoon|
|Turmeric powder||1⁄4 Teaspoon (Haldi)|
|Seedless raisins||1⁄4 Cup (4 tbs), soaked in vinegar overnight|
1 In a heavy based pan, add the grated carrots.
2 Add the sugar and 1 cup of vinegar.
3 Cook over a low heat while stirring continuously.
4 Add the garlic and cook till the carrots soften.
5 When the carrots are soft, add in the soaked raisins and bring to a boil.
6 When the sauce thickens, add the powdered spices.
7 Stir the mixture well.
8 Taste for sugar as well as salt.
9 The pickle should be more sweet than sour.
10 Remove from heat and cool.
11 Transfer to sterilized containers and store in refrigerator.
12 Serve as desired.
