Saffron Rice

Ingredients
  Chicken broth 3 Cup (48 tbs) (Well Seasoned)
  Dry white wine 1 Cup (16 tbs)
  Chopped scallions 1 Teaspoon
  Chopped parsley 1 Teaspoon
  Powdered saffron 1⁄2 Teaspoon
  Coriander 1⁄2 Teaspoon
  Fennel 1⁄2 Teaspoon
  Mace 1⁄8 Teaspoon
  Uncooked long grain rice 2 Cup (32 tbs)
  Butter 2 Tablespoon
Directions

In a large saucepan, combine chicken broth, wine, scallions, parsley, saffron, coriander, fennel, and mace.
Bring rapidly to boiling over high heat.
Add the rice all at once; do not stir.
Cover tightly so that no steam escapes.
Turn the heat as low as possible.
Cook for 30 minutes.
Stir in butter and serve.
