Bitter Gourd Sauce

This spicy recipe will make the bitter gourds most delectable to taste. It is also an authentic recipe from Kerala, India.
Ingredients
  Bittergourd 2 Cup (32 tbs), thinly sliced
  Onion 1 Medium, thinly sliced
  Powdered jaggery 1 Cup (16 tbs)
  Red chilly powder 1⁄2 Teaspoon
  Turmeric powder 1⁄2 Teaspoon
  Tamarind paste 2 Tablespoon (To Taste)
  Oil 1 Teaspoon
  Mustard seeds 1 Teaspoon
  Curry leaves 1 Tablespoon
Directions

1. Heat oil & saute the onions. Add the bittergourd. Fry for 5 minutes until they turn light brown. Add red chilly powder and turmeric powder. Stir well. Then add tamarind, jaggery, salt and enough water to cook the bittergourd. Stir occasionally. Cook until the chutney becomes thick.
Seasoning
Heat oil and splutter the mustard seeds. Add curry leaves and pour this on top of the chutney. Mix well and serve hot with rice.

i would like to try it some time.. we have mashed bitter gourd with potatoes and a stir fried bitter gourd recipe with either diced pumpkin or potatoes or both, but this sure is unique! :)
