Delicious Chicken Curry

Today Mar is going to share with us her precious recipe, chicken curry.
Ingredients
  Whole chicken 1 (Jointed Into 8 Pieces/ Individual Chicken Portions / Fillets)
  Creme fraiche 75 Gram
  Onion 1
  Carrot 1
  Leek 1
  Celery stick 1
  Garlic 1 Clove (5 gm)
  Flour 50 Gram
  Dessicated coconut 25 Gram
  Curry paste 50 Gram
  Sultanas 50 Gram
  Chicken stock 500 Milliliter
  Apple 1
  Dried cumin 1 Teaspoon
  Coriander 1 Teaspoon
  Cinnamon 1 Teaspoon
  Tomato puree 2 Teaspoon
  Olive oil 1
Directions

1. Chop onion, carrot, leek and celery. Crush peeled garlic.
2. In a heavy based saucepan fry off the chicken pieces in olive oil to
brown.
3. Add curry paste & spices, onion & garlic, stir and continue to cook for
approx. 5 mins.
4. Add the flour while stirring over the heat - to make a roux.
5. Add remaining ingredients and bring to the boil.
6. Reduce heat, cover and allow to simmer for 1- 1½ hours, stirring
occasionally.
7. Just before serving stir in the Yeats Country Créme Fraiche.
Serve with steamed rice or creamed potato.
