Baghare Baigan

The baghare baingan is an indian brinjal preparation that can be served with rice or rotis. The brinjals are microwave cooked with spices like red chilies, aniseed, turmeric, tamarind, cumin and coriander.
  Brinjal 300 Gram
  Oil 1 Tablespoon
  Salt To Taste
  Red chili powder 1 Teaspoon
  Aniseed powder 1 1⁄2 Teaspoon
  Turmeric powder 1⁄4 Teaspoon
  Tamarind paste 1 1⁄2 Tablespoon
  Cumin seeds 1⁄2 Teaspoon
  Coriander powder 1 Teaspoon

Heat oil in a 1 litre medium dish on 100% power for 1.00 minutes.
Add the cumin seeds and microwave on 100% power for 30 seconds.
Add the brinjal pieces, salt, red chilli powder, turmeric powder (optional), aniseed powder and corriander powder.
Mix well.
Cover with a cling film/ lid and microwave on 100% power for 5:00 minutes.
Stir twice during cooking.
Add the tamarind paste dissolved in a little water.
Mix and microwave on 60% power for 3:00 min.
Mix well.
Allow to stand covered with a lid Aluminium foil for 5:00 minutes before serving.
