Indian Corn Muffins

Ingredients
  Cornmeal 2 Cup (32 tbs)
  Whole wheat pastry flour 1⁄2 Cup (8 tbs)
  Baking powder 1 Teaspoon
  Baking soda 1⁄2 Teaspoon
  Eggs 2 Large, beaten
  Buttermilk 2 Cup (32 tbs)
  Honey 1 Tablespoon
  Oil 1 Tablespoon
Directions

Stir together the cornmeal, flour, baking powder and soda in a large bowl.
Whisk eggs, buttermilk, honey and oil in another bowl.
Combine the two just until mixed.
Spoon into greased muffin cups and bake until done.
Bake at 375 degrees 20 to 25 minutes
