|Diced celery||1 Cup (16 tbs)|
|Green onion with tops||1 Cup (16 tbs)|
|Rice||1 Cup (16 tbs)|
|Grated lemon rind||1 Tablespoon|
|Lemon juice||18 Tablespoon|
Heat shortening in cooker.
Lightly tan celery and onions.
Add rice, lemon rind, salt, pepper, and water mixture.
Close cover of cooker and put pressure control in place.
When pressure is reached, remove cooker from the flame.
Allow to cool normally.
When cool, open cooker and stir rice with a fork to fluff.
