Baked Indian Pudding
|Cornmeal||1⁄3 Cup (5.33 tbs)|
|Soy flour||2 Tablespoon|
|Sweet cider||1⁄3 Cup (5.33 tbs)|
|Ground cinnamon||1⁄2 Teaspoon|
|Ground ginger||1⁄2 Teaspoon|
|Molasses||1⁄2 Cup (8 tbs)|
|Nutritional yeast||3 Tablespoon|
|Chopped dried fruits||1⁄2 Cup (8 tbs)|
Scald milk in top of double boiler over direct heat Make paste of cornmeal and soy flour in cider.
Blend with milk, cover and cook over hot water for 20 minutes.
Add rest of ingredients.
Remove from heat.
Turn into oiled casserole.
Bake at 325Â° F. for 2 hours or until set.
Serve hot, topped with yoghurt.
