1 In a bowl, sift the flour.
2 Add in salt and 1 tbsp ghee.
3 Gently rub the ingredients between the palms to mix them thoroughly.
4 Pour in water gradually, alittle at a time and knead to a soft dough.
5 Take a small portion of the dough and roll out into a chapati .
6 Spread with ghee and fold up again into a round ball.
7 Roll out once more.
8 On a hot griddle, put one paratha at a time.
9 Cook one side and turn over.
10 Add a little ghee from the sides till it gets a nice brown colour.
11 Cook on a low heat and when ready, it should be crisp.
12 Repeat with the remaining dough.
13 Serve hot.
