Stuffed Potato Puri
|White cumin seeds||1 Teaspoon|
|Water||1 (As Required)|
|Ghee||2 Cup (32 tbs) (For Deep Frying)|
|Red chili powder||1⁄2 Teaspoon|
1 In a pan, boil the potatoes until tender.
2 Allow to cool.
3 Mash using a spoon.
4 Add in all the spices, red chilli powder and salt to taste, mix well.
5 In a pan, heat the ghee.
6 Add in the potatoes and cook for a minute.
7 Allow to cool.
8 Knead the flour into a dough, adding water.
9 Make round balls from the dough, the size of billiard balls.
10 Roll out each ball with a rolling pin.
11 Put the filling in the centre and fold the edges to seal the filling inside.
12 Roll out gently making sure that the stuffing remains intact.
13 In a deep frying pan, heat the ghee.
14 Carefully put in the rolled out puris and fry until crisp and golden.
15 Turn and cook on the other side as well.
16 Repeat with the remaining dough.
17 Serve hot with the sabzi or raita of your choice.
