Tomato Rice

Ingredients
  Rice 2 Cup (32 tbs)
  Water 3 Cup (48 tbs)
  Fresh tomato juice 1 Cup (16 tbs)
  Green chilies 4
  Peppercorns 5
  Cumin seeds 1⁄2 Teaspoon
  Mustard seeds 1⁄2 Teaspoon
  Turmeric powder 1⁄2 Teaspoon
  Cinnamon stick 1 Inch
  Cloves 4
  Ghee 4 Teaspoon
  Salt To Taste
Directions

MAKING
1 In a pan, heat one tsp. ghee.
2 Add in the rice and fry well.
3 Pour in the boiling water, along with the tomato juice.
4 Cook, covered until the rice is cooked.
5 In a separate pan, heat the remaining ghee.
6 Add in green chillies, pepper corns, cumin seeds, cloves and cinnamon, fry briefly.
7 Simmer gently.
8 Add in salt and turmeric powder.
9 Add in the cooked rice.
10 Lower the heat and stir gently to mix well.

SERVING
11 Serve hot with a curry or raita of your choice.
