Boil the potatoes.
Be careful they're done just right they should not break up.
Cool them thoroughly, then peel and cut into thick round slices.
Pour the oil into the pan and heat it for a few minutes.
Gently, drop in the potato slices.
If the pan is not big enough, you will have to do it in batches.
Keep the heat at medium and after 3-4 minutes, lift up one edge of the potato and check whether it's evenly golden brown.
Remember that the ones in the middle will brown faster.
When all the slices are done on both sides, arrange them on a serving plate.
Sprinkle over salt and chaat masala.
