Mini Green Theplas

A completely nourishing breakfast that will keep you active through the day -- these mini theplas are a great alternative if you want a change from the regular oats porridge. Fortified with millet, ragi and soya flour, they are fibre-rich and extremely enjoyable.

Ingredients

For topping
Oil 1 Tablespoon
Finely chopped onions 1/4 Cup (4 tbs)
Finely chopped capsicum 3/4 Cup (12 tbs) (colored)
Low fat paneer 1/4 Cup (4 tbs) , crumbled
Finely chopped coriander 2 Tablespoon
Salt To Taste
Other ingredients:
Quick cooking rolled oats flour 1 Cup (16 tbs)
Ragi flour 1/4 Cup (4 tbs)
Soya flour 1/4 Cup (4 tbs)
White millet flour 1/4 Cup (4 tbs) (extra for rolling)
Finely chopped spinach 1 Cup (16 tbs)
Sesame seeds 1 Tablespoon
Turmeric powder 1/2 Teaspoon
Ginger green chilli paste 1 Tablespoon
Garlic paste 2 Teaspoon
Sugar 1 Pinch
Lemon juice 4 Drop
Oil 2 1/2 Teaspoon
Water 2 Tablespoon (as needed)

Directions

MAKING

1. In a pan, heat oil, add onion, saute for 2 minutes or until the onions turn translucent. Add in the capsicum and paneer, coriander and salt, mix well and cook for 1 to 2 minutes.

2. In a mixing bowl, take oats flour, add ragi flour, soya flour, white millet flour, spinach, sesame seeds, salt, turmeric powder, ginger green chili paste, garlic paste, sugar, lemon juice and oil (1/2 teaspoon), add enough water and knead to a dough.

3. Divide into 10 equal portions and using little white millet flour, roll into 4 inch circles. Brush a heated griddle with oil and cook the theplas from both sides using little oil. Top with the prepared mixture.

SERVING

4. Serve with your choice of beverage.
